BRUNELLO
DI MONTALCINO |

Brunello
is obtained from 100% large Sangiovese grapes. The vineyards are
constructed with cordon spur which have an average age of fifteen
years and a density of 4,500 plants per hectare. The grapes are
picked up by hand and any bunches which are not intact are discarded
in the vineyard. Fermentation occurs in the cellar in steel tubs
each with a capacity of 5.000/10.000 litres. The process lasts 18-20
days, during which the must is poured into new tubs and stirred
daily. The temperature of the must is controlled and maintained
within limits by an external cooling of the tubs. The wine thus
produced is then decanted into oak barrels where it remains for
2/3 years.
"Le Chiuse" Brunello is a clear wine, bright garnet red
in colour. It has an intense persistent fragrance, pure and full-bodied.
Various fragrances can be recognize, from forest fruits to light
vanilla. To the taste the wine is snooth and elegant, dry with an
excellent persistent of aroma. It ages well, improving with time.
It should be served at a temperature of 18-20°C, the bottle
having been left in a warm place for at least 24 hours and uncorked
several hours before serving. Every vintage has its own determining
caracteristics and features. In the best vintages, 20% of the production
is seat to age in our cellars for a further year thereby becoming
"Reserve". |
