"Le
Chiuse" extra Virgin Olive Oil is made from a variety of olives,
principally from Frantoio, Leccini and Pendolino. The olive grove
covers about 6 hectares of the farm and is at an altitude of about
600 metres. The olives are picked by hand during the month of November
when they are still quite immature, in order to produce a nutritious
oil rich in vitamins. The olive processing system made with slightly
unripe olives yield a smaller amount of oil, although the quality
of the product is much higher. the crushing of the olives is carried
out in the open air, as it was in the past, in order not to alter
the organic quality of the oil, and without filtering so that the
oil maintains all its natutal qualities. Through altitude and exposure
our olives possess a natural defence against plant parassites which
allows us to cultivate the plants biologically without the use of
pesticides and herbicides. "Le Chiuse" Extra Virgin Olive
Oil is an oil with an intense aroma, light but full of flavour with
a very low acidity level (0,3%), possessing a slightly bitter and
spicy after-taste typical of an oil produced by hand-picked olives
at an early stage of maturity. All these features give the oil,
besides its high quality, an excellent capacity for conservation.
